INGREDIENTS

For the Salad:

  • 1/2 avocado, sliced
  • 1 red chili, sliced
  • 1/4 can black beans
  • 2 cups leafy greens
  • 1/2 cup pre-cooked sweet potato/quinoa
  • 1/2 cup cherry tomatoes, sliced
  • 2 tbsp LOVE CORN

For the Dressing:

  • 1/2 juiced lime
  • 1 tbsp oil
  • 1 tbsp tahini
  • Salt + pepper to taste
  • 1 tsp sesame seeds

DIRECTIONS

  1. Prepare quinoa and/or sweet potatoes, if not pre-cooked
  2. Mix the dressing ingredients together, and set to the side
  3. Assemble the salad ingredients and add dressing!
