INGREDIENTS
For the Salad:
- 1/2 avocado, sliced
- 1 red chili, sliced
- 1/4 can black beans
- 2 cups leafy greens
- 1/2 cup pre-cooked sweet potato/quinoa
- 1/2 cup cherry tomatoes, sliced
- 2 tbsp LOVE CORN
For the Dressing:
- 1/2 juiced lime
- 1 tbsp oil
- 1 tbsp tahini
- Salt + pepper to taste
- 1 tsp sesame seeds
DIRECTIONS
- Prepare quinoa and/or sweet potatoes, if not pre-cooked
- Mix the dressing ingredients together, and set to the side
- Assemble the salad ingredients and add dressing!
