Creamy Asparagus Soup

A flavorful, creamy soup that is filled with nutrients and can even be enjoyed during the Spring and Summer!


  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 2 pounds asparagus, ends trimmed, cut into ½-inch pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups vegetable broth
  • ½ cup coconut cream, or heavy cream
  • 1 tablespoon lemon juice
  • Salt and Vinegar LOVE CORN


  1. Heat olive oil in a large pot over medium heat, add in onion and cook until translucent, about 5 minutes.
  2. Add garlic into pot, cook for 1 minute before adding in asparagus, salt, and black pepper. Cook for 5 minutes.
  3. Stir in broth then reduce heat to low, cover pot with lid, and simmer for 10-15 minutes or until asparagus is soft.
  4. Either use an immersion blender to puree soup in pot, or let soup cool before transferring to a blender and blend until smooth then pour pureed soup back into pot.
  5. Stir coconut cream and lemon juice into soup, then taste and adjust seasoning as desired. Ladle creamy asparagus soup in bowls, and serve with  Salt and Vinegar LOVE CORN sprinkled on top!
